Discerning diners across Bali can look forward to an exceptional, rare treat on Friday 17th September 2021 when Mozaic Restaurant Gastronomique collaborates with Kaluga Caviar to present an unforgettable evening.
Chef Owner Chris Salans and his culinary team are crafting an outstanding menu showcasing the delectable caviar, which is harvested from fish raised in pure freshwaters from the Himalayan Quing Chong mountains for at least 15 years. Prepared with the finest Himalayan mountain salt using the malossol, lightly salted, method, the resulting caviar has a delicate, well-balanced taste.
The six-course tasting menu features Kaluga Caviar in the amuses-bouche, as well as the first three courses, including Japanese Hamachi with caviar, kaffir lime dressing and shaved fennel, and lobster tail with caviar, seaweed butter and Jerusalem artichoke.
The meat course is New Zealand venison accompanied by koji garlic puree, bone marrow and mushroom. This remarkable meal wraps with The Whole Cocoa Pod, a dessert featuring Valrhona Jivara chocolate with roasted banana and caramelised peanuts.
The six-course tasting menu costs IDR 950,000++ per person, while the optional special pairing of carefully selected premium wines is IDR 850,000++ per person.
Dinner reservations are available from 5pm to 8pm. Due to the limited supply of this precious caviar, and to maintain the highest standards compliant with the new normal, the dinner will be limited to 30 guests.
