Jakarta’s famed French restaurant, Lyon, proudly invited discerning diners to a special dining experience with guest chef Nic Vanderbeeken from Apéritif in Bali on 28 and 29 February. Diners could choose from opulent lunch and dinner set menus on the two aforementioned dates, and enjoy Nic’s inspired culinary creations.
Apéritif is nestled amidst a verdant jungle valley in Ubud, creating an unrivalled ambience to enhance the fine dining experience the restaurant offers. The menus were inspired by the borderless nature of today’s world, showcasing the endless global flavours, including but not limited to, rich ingredients from Indonesia.
Nic has more than 20 years of experience working in the best and most respected kitchens in countries like France, the Netherlands, Belgium, Vietnam and Indonesia. He is known for his penchant for incorporating lesser-known Indonesian ingredients into modern European fare – juxtaposing the best of contemporary European techniques with ingredients from the Old Spice islands.
Apéritif is much sought after for its ability to tell stories through food, using only the best seasonal produce from the restaurant’s own greenhouse, Bali and around the world. It was a rare delight for food connoisseurs in Jakarta to enjoy Nic’s delightful signature dishes at Lyon last February.
