A Culinary Legacy Opens in Portofino

DaV Mare to open at Splendido Mare, A Belmond Hotel, Portofino.

An exciting culinary collaboration has been announced by Belmond with the opening of a new restaurant, DaV Mare at Splendido Mare, a Belmond Hotel, Portofino. The hotel has partnered with Da Vittorio Group and combined the brand’s legendary art of hospitality with the internationally renowned culinary expertise of the Cerea family, which was awarded three Michelin stars in 2010.

DaV Mare is founded in the quest for the best seasonal and locally sourced ingredients, including fish and other seafood fresh from the Portofino bay, which will be the main feature of the menu, alongside traditional flavours of the region such as capon served with a creative reinterpretation.

Executive chefs Enrico and Roberto Cerea and Paolo Rota combine their culinary expertise and creativity with the local knowledge and skills of Roberto Villa, executive chef at Splendido Mare. Together they will seek out the best ingredients, use simple cooking techniques to elevate the flavours and emphasise slow food principles, a movement that originated in Italy.

The interior design of DaV Mare is by Festen Architecture and reflects the relaxed sophistication of the overall theme of the charming 14 room guest house, Splendido Mare. Detailed references to the humble beginnings of the fishing harbour are blended with the iconic glamour of the 1950s, designed to make guests feel at ease while taking in the historical spirit of the hotel.
