The Fullerton Building celebrates its 90th anniversary this year. Now home to The Fullerton Hotel Singapore, it has brought back The Courtyard’s Chocolate Buffet to great acclaim. Helmed by Executive Pastry Chef Siddharth Prabhu on Friday and Saturday evenings, enjoy a slew of novel creations such as the theatrical live nitro station for an exciting display that uses liquid nitrogen to freeze liquid chocolate into a ball that you break open to find textural treasures. It’s not all about sweet treats though, there are plenty of savoury morsels such as cocoa and spice-rubbed baby pork ribs and even baked ocean trout mini quiches with ivory white chocolate. A Valrhona tasting table presents 12 bite-sized chocolate varieties in their purest form, while the little ones will love the chocolate fountain. A selection of cakes, macarons, verrines and tarts bring a satiating end to every chocoholic’s dream meal, which can be accompanied by special chocolate cocktails.
