Italian Excellence at Alto Restaurant & Bar

Alto Restaurant & Bar at Four Seasons Hotel Jakarta recently played host to a culinary masterpiece, as two maestros of Italian cuisine, Executive Pastry Chef Mattia Casabianca of Michelin-starred Uliassi, Ancona, and the hotel’s own Chef Marco Violano, collaborated for an exclusive four-hand dinner. This gastronomic voyage unfolded on 2 and 3 February 2024, offering a rare and unforgettable experience for diners. Guests were treated to an evening of extraordinary indulgence, savouring a carefully curated selection of Italian specialities paired with premium wines.

The culinary journey commenced with extravagant starters from Chef Marco, including the gold-dusted potatoes with truffle and porcini and lobster sabayon with Sevruga caviar. Sublime mains followed, featuring delights such as pumpkin tortelli and chicken crumble, Chilean sea bass with caponata and cherry sauce, and beef tenderloin Rossini-style with fresh black truffle. Chef Mattia’s world-renowned expertise came next as he opened with a refreshing interlude in the form of Chartreuse white melon and crystallised mint leaves. Guests then indulged in the classic Sicilian dessert, La Cassata, before concluding the dinner with a delightful petit four. These treats whispered “dulcis in fundo”, saving the best for last – a perfect Italian finale to an evening of culinary excellence.

This four-hand dinner marked the beginning of Italian Affair, an exciting new culinary programme at Alto Restaurant & Bar. 

Throughout 2024, Alto plans to host multiple collaborations with renowned chefs, inviting guests to savour the flavours of Italy like never before. Each meal promises a memorable journey filled with extraordinary moments.
