Beyond The Borders, A Culinary Movement That Creates Tasty Collaboration

Pop-up collaborations have evolved beyond guest appearances, resulting in a flavourful programme for all.

In Jakarta’s evolving culinary scene, YOUNG has quickly emerged as a fire-forward force, pushing boundaries with its modern take on Thai-inspired grill cuisine. Under the creative direction of Chef-Owner Yohans Gozal, YOUNG has become a symbol of passion for unexpected collaboration.

Chef Yohans, experienced in firing up the kitchen of DB Bistro and Santi in Singapore, as well as Bali’s Merah Putih and Sangsaka, founded YOUNG with a vision which is to reframe the grill not as a tradition, but as a canvas. The result is a menu that bridges Southeast Asian heat with contemporary touch, earning the restaurant a loyal following and a reputation for fearless experimentation.

That spirit of openness took center stage in Beyond the Plate, a collaborative dinner with ABSteak by Chef Akira Back in May 2025. The evening showcased YOUNG’s signature grilled dishes layered against Korean-American flavors, creating new interpretations of flame-led cuisine.

This June, YOUNG returns with another programme, Beyond the Borders, teaming up with Atelier Binchotan, a 17-seat bistronomy darling from Kuala Lumpur. Known for its Michelin-selected status and theatrical open-fire cooking, Atelier brings French-Japanese technique into the mix, setting the stage for a three-way dialogue in smoke, seasoning and style.

For YOUNG, collaboration isn’t a trend. It’s not a one-time thing, it’s not seasonal. It is linear to growth of the community, as well as the development of the restaurant. Starting as a spark, each edition of Beyond the Borders will continue to smolder, reaffirming its role as a tastemaker, uniting chefs, cultures and culinary codes through the primal, universal language of fire.
