Highly skilled chef Bayu Retno Timur has been promoted as the new executive chef of Mandapa, a Ritz-Carlton Reserve.
The opulent all-villas and suites resort Mandapa, a Ritz-Carlton Reserve recently announced the appointment of Bayu Retno Timur as the new executive chef. In his new role, Bayu will continue to craft bespoke dining experiences for guests at the resort’s outstanding culinary destinations, Kubu and Sawah Terrace. In addition, he also oversees the food and beverage front at the resort’s Pool Bar, The Library, and the newest addition, Ambar.
Bayu honed his passion for the culinary arts early in his life. He kicked off his career in 2003 in the pastry and bakery section of KU DE TA Bali, before being promoted to commis chef. Three years later, he moved to Bvlgari Resort Bali as demi chef de cuisine at the all-day dining Sangkar Restaurant. His penchant for fine dining earned him a spot at the resort’s multi-award-winning Italian restaurant Il Ristorante, where he became the junior sous chef. In 2012, Bayu moved to The Mulia, Mulia Resort & Villas Nusa Dua, Bali where he tackled new challenges as the senior sous chef.
His path took him to Mandapa, a Ritz-Carlton Reserve as the chef de cuisine for Kubu Restaurant. His illustrious journey also saw him promoted to executive sous chef in 2018, before getting to where he is today, as well as multiple accolades and prestigious participation in the Bocuse d’Or Asia-Pacific 2018 in Guangzhou, China.
