Having trained and worked in both Italy and the United States, Chef Lauria brings a global perspective to his craft while staying true to the Italian culinary tradition. His kitchen is a place of fire, intuition and simplicity, where hand-rolled pasta, slow-braised sauces and charcoal-smoked flavours come together in harmony.

The menu is a celebration of both tradition and innovation. Della Terra’s signature dish, Fazzoletti Grano Arso, is a rare and extraordinary creation: homemade pasta sheets grilled over charcoal to impart a delicate smokiness, topped with creamy raw Javanese cow’s milk ricotta, savoury anchovies and brightened with a hint of lemon. It’s a dish that speaks softly but lingers in your memory.

Another highlight from the antipasti menu features tender pork meatballs, expertly seasoned and served with a rich red sauce topped with shavings of Pecorino Romano. Comforting and deeply satisfying, these meatballs are a must-try.
