The culinary offerings are as modern, eclectic and diverse as the two chefs heading up Cocoon’s kitchen – Nick Philip, an Australian from the Gold Coast whose background is in fresh, haute-Mediterranean cuisine, and Luis Varela Mata, a Spaniard from Barcelona trained by the legendary father of molecular gastronomy, Ferran Adria.

The romantic dinner package features numerous selections that showcase the duo’s culinary prowess, such as a sublime entree of Goats Cheese Espuma with fig agar jelly, macadamia powder, and a tomato and vanilla emulsion. To get a taste of Indonesian flavour infused into fine dining fare, you could choose the Angus Tenderloin Carpaccio, which is seasoned with ‘rendang’ spices’ and served with arugula and grated parmesan foie gras. Another fine choice which shows off the chefs’ skills is the Grilled Slipper Lobster, paired with curried Jerusalem artichoke, chorizo, lemon pea puree and kaffir lime ‘cloud.’ For entrees, there are tempting choices like Sous Vide Duck Breast & Peking Duck Crispy Ravioli or lighter but equally delicious dishes like Slow Cooked Nori Wrapped Huon River Salmon. There are many creative desserts to end your meal, but chocolate lovers will probably want to go with the 61% Dark Chocolate Fondant, the luscious richness of which is cut by the accompanying passionfruit soup and confit ‘papaya tempura’ red rose’s sorbet.

While the romantic setup is perfect and the choice of cuisine divine, one of the most attractive things about the romantic dinner package is that it comes with 2-hours of free flow beverages.
