Executive Chinese Chef Benson Fok is the real deal. As resident creative genius behind the scenes at Shang Palace, he spent his teenage years in Hong Kong, honing the sought after skills that keep guests and visitors yearning for his authentic Cantonese culinary experience. As we are only as strong as our weakest link, Fok chose master Chinese Barbecue Chef Christopher Chai as his right hand man. A native of Malaysia, and one of the lucky people to have turned their hobby into a full-time career, Chef Chai specializes in Cantonese and Hong Kong style Chinese food, and is responsible for ensuring that diners can taste the authentic flavors of such cuisine.
House specialties include Sauteed Duck Fillet with Black Pepper Sauce, Stir Fried Shredded Duck Meat with Bean Sprout, Wok Fried Minced Duck Meat served in a lettuce cup and Dim Sum prepared by the restaurant’s exclusive Dim Sum Chef Low Kien Fatt. For an after dinner treat, Shang Palace offers an extensive menu for the tea aficionado, delighting your senses with a selection of Hua Tiao Chiew, Mou Tai and Wu Liang Ye teas.
