Glow Restaurant is the culinary brainchild situated within the grounds of Como Shambhala’s internationally renowned healing resort. Working with each guest to ensure compatibility between their intentions and the meals served, Executive Chef, Amanda Gale, and her team draw up a specific dining plan to deliver the freshest, most nutritious and tastiest food imaginable.
Dishes might include lime leaf, chilli and coconut curry of fern tips and cherry tomatoes and seared mahi-mahi with, baby zucchini, chickpea and mint salad with preserved lemon and sumac dressing. No flavor is spared here with inspirations from around the globe including India and Italy. Not interested in counting calories, the restaurant thrives on creating balance for their guests.
Subtle differences matter here as the team utilises raw unprocessed honey instead of granulated sugar. Raw fruits and vegetables are highly abundant as are Balinese inspired dishes, and an extensive juice extract menu to help deliver nutrients into your body directly and deliciously.
A special Sunday brunch is also offered from 11:00 A.M to 2:30 P.M each week, celebrating a marriage of aromas and flavors, good food and delightful company. Watch local village girls practice traditional dance to the sounds of the gamelan orchestra as the kitchen creates enticing combinations of healthy cuisine that simply must be experienced.
Private cookery classes are also available in Glow’s kitchen, ranging from traditional Indonesian through to healthy COMO Shambhala cuisine. Dine in delight within the restored 160-year-old former Javanese restaurant for breakfast, lunch and dinner.
