Leading the Chinese kitchen is Chef Chew Kim Seng, known as Chef Steve, whose culinary journey spans more than two decades and several countries. Bringing his expertise in authentic Chinese cuisine to Garden Café, Chef Steve approaches his cooking with a philosophy of humility, curiosity, and continuous learning. His Roasted Duck embodies that philosophy, a dish where time becomes an essential ingredient. Marinated with spices and aromatics for long hours, the duck is carefully air-dried before being slowly roasted until its skin turns golden and delicate while keeping the flavourful meat underneath tender.
Indian flavours find their voice through Chef Devendra Datt, who brings more than 15 years of experience and a deep connection to the culinary traditions of his homeland. Among his signature creations is Rara Gosht, a North Indian speciality of succulent lamb and minced meat, slow-cooked in an aromatic gravy. Rich, warming, and layered with handpicked spices, it offers a taste of the culinary heritage that continues to inspire Chef Devendra.
