An Ode to French Master

Amuz Gourmet Restaurant invites the city’s discerning diners to celebrate Master Auguste Escoffier’s 175th birthday with a gala dinner.

On the occasion of the 175th anniversary of the great master of French gastronomy, epicureans from all over the world will gather on the evening of 28 October to share the same menu, an ambition accompanied by an act of charity as was conceived 109 years ago by The Cook of Kings and King of the Cooks, Master Escoffier himself.

August Escoffier, born in 1846 in France, was the first chef, restaurateur and culinary writer to organize, categorize and standardize French cuisine and art of dining, thus modernizing French cuisine and elevating the profession. He worked in partnership with hotelier César Ritz, rising to prominence together at the Ritz hotel in Paris and then at the Carlton Hotel in London, which under his reign become the culinary epicentres of the world. For his tremendous achievements in promoting French gastronomy to the world, he was granted the title of Officer of the Legion of Honour by the President of France.

On 28 October, Amuz Gourmet Restaurant will celebrate the life of August Escoffier along with the Indonesian chapters of the Disciple Escoffier. This celebration will present a signature Diner d’Epicure for which Auguste Escoffier was so renowned. The dinner will be a five-course tasting menu with all premium French wines. The menu has been specially designed by the President of the Association, chef Nicolas Sale, and chef Guillaume Gomez, the Ambassador of French Gastronomy and the official chef of the French Presidency. Chef Chris Salans of Mozaic Restaurant in Bali, pastry chef Fransisca Tamba of Amuz Gourmet Group, chef Stefu Santoso of Aprez cafes and catering, and chef Gilles Marx of Amuz Gourmet, will be cooking on the evening serving a menu that feature Duck Declinaison, butter poached lobster, fresh French cheeses and Manjari Valrhona chocolate croustillant.

The food will be carefully paired with specially selected premium French wines, including Charles de Fere, Cuvee Jean Louis, Brut NV / Gustave Lorentz, Pinot Gris Grand Crus d’Altenberg de Bergheim 2011 / Domaine Chanson, and Bourgogne Chardonnay 2016 / Jean Pierre Moueix.

This special dinner is priced at IDR3,250,000++ per person. Some of the proceeds will be donated to Yayasan Komunitas Ambiente, supporting Agats in Papua. The gala dinner will start at 6pm.
